College Food

As a college student I have found that life is about what's cheapest and easiest because I have little time and even less money. Food is no exception for that rule, but at the same time I'm not opposed more expensive recipes as long as they are good. This blog is dedicated to some of my most favorite recipes.   • Ham and Egg Cups


    Ingredients:
    8 slices sugar-cured deli ham
  • 4 tbsp/1 ounce shredded cheddar cheese
  • 8 large eggs
    salt and pepper for taste

    These are actually really delicious. I loved them so much when I made them. I added more cheese on top because I like cheese a little too much, but if you don't want to add the extra cheese that's ok too. The ham and egg cups are very simple and very easy to make. (Perfect for a college student, or anyone, who doesn't want to take too much time on breakfast.)

    Here's How To:


    1.  
    Preheat the oven to 400 degrees F. Coat 8 muffin cups with cooking spray. Set aside.
    2.  
    Position 2 slices of ham in each of the muffin cups to insure that there are no holes in the bottom of the ham "cups." Sprinkle 1/2 tablespoon of the cheese in the bottom of each cup.
    3.  
    Whisk up the eggs and the pour a little bit of egg in each ham cup. Sprinkle each egg lightly with salt and pepper. Bake about 15 minutes or to desired degree of doneness. Carefully remove the egg cups using the ham to lift onto serving plates.
